If you've been buying cheese from us on Halbert Lane, here's the news: Brazos Valley Cheese is now Heritage Cheese Company.
Brazos Valley Cheese was started in 2005 by Rebeccah Salmeri, who made her first cheese back in 1999, and her cousin. Rebeccah later founded Brush Creek Creamery in Idaho. Today Brazos Valley belongs to an ownership group that includes members of her family, and we chose a name that honors that heritage.
What isn't changing: our love of good cheese. While we get our Waco cheese room ready, we're carrying cheese from a few trusted artisan creameries, including Rebeccah's Brush Creek Creamery.
What's new:
- Order by phone and we'll ship. Call (254) 723-4777 and we'll send your cheese anywhere in the U.S. with ice packs, or have it ready for pickup.
- Online ordering is coming soon. We're building a full online shop.
- Cheesemaking classes in early 2027. Hands-on, make-your-own-cheese classes for individuals and couples, right here on Halbert Lane.
