Rebeccah Salmeri made her first cheese in 1999, at nineteen, with the extra milk from her family’s dairy.
In 2005 she and her cousin started Brazos Valley Cheese on Halbert Lane in Waco, where it won ribbons from the American Cheese Society. A few years later she moved to Idaho and started Brush Creek Creamery in the little town of Deary, which has gone on to win national awards of its own.
Today Brazos Valley Cheese belongs to a group that includes members of Rebeccah’s family, and it has a new name: Heritage Cheese Company.

While we get our Waco cheese room ready, we carry cheese from a small group of trusted artisan creameries, including Brush Creek Creamery, the Idaho creamery Rebeccah founded. Every one makes cheese in small batches, by hand, the way Brazos Valley always has.
Buttery and mushroomy, with a soft bloomy rind.
Mild, buttery and smooth. Everybody’s favorite.
Raw-milk Cheddar, gently smoked and cave-aged 60+ days.
Stretched by hand, soft and milky.
Squeaky curds with a slow ghost-pepper burn.
Tangy strained-yogurt cheese balls in olive oil and herbs.
The American Cheese Society competition is the most important cheese judging in North America. Brazos Valley Cheese won 11 ribbons there from Waco, and Rebeccah’s Brush Creek Creamery has won 13 more in Idaho, 9 of them first place.
Our cheeses packed with preserves and pairings, ready to become a party platter. Call us to order one, and we’ll ship it with ice packs or have it ready for pickup.
Hands-on artisan cheesemaking classes for individuals and couples: warm the milk, cut the curd, stretch the mozzarella, and take home what you made.
Classes start in the first part of 2027, as we bring cheesemaking back to Waco. They’re small and friendly, and no experience is needed. A class for two makes a great date or gift.
We’re building a full online shop so you can order our cheese, curds, spreads and gift boxes with a few clicks. Leave your email and we’ll tell you the day it opens, plus when cheesemaking restarts in Waco.
